Roasted Asparagus and Mushrooms

(Many clients have tried these and they are a hit)

Servings: Measure so you get the right serving for your meal- then share or save for future meal!

"A delicious and easy side dish can be made by tossing asparagus and mushrooms together with olive oil and rosemary. I love roasting veggies!


1 bunch fresh asparagus, trimmed

1/2 pound fresh mushrooms, quartered

2 sprigs fresh rosemary, minced

2 teaspoons olive oil

kosher salt to taste

freshly ground black pepper to taste


1. Preheat oven to 450 degrees F (230 degrees C). Lightly spray a cookie sheet with vegetable cooking spray. 2. Partially cook asparagus in a ziplock in the microwave for 3 minutes.

3. Place the asparagus and mushrooms in a bowl. Drizzle with the olive oil, then season with rosemary, salt, and pepper; toss well. Lay the asparagus and mushrooms out on the prepared pan in an even layer. Roast in the preheated oven until the asparagus is tender, about 15 minutes.

*clients can expect to loss 2 to 5lbs a week for the first 2 weeks and 1 to 2 lbs a week thereafter

Sauteed Zucchini with Tomatoes and mushrooms

Slice 1 zucchini, ~(1 cup cooked) (2 green)

1 cup fresh mushrooms (will cook down to less than 1/2 cup) 3/4 green

1/2 tomato. 1/4 green

Cook zucchini in ziplock for 3 minutes Add all to saute pan and stir fry with salt, pepper, and capers. ( 1 Condiment)

Top 1 T of Parmesan. (1 condiment)

3 servings of green and 2 condiments.

Serve with the meat of your choice! 


2 cups Frozen Okra (will cook down to be 1 1/2 cups) (3 greens)

Boil for 10 minutes. Drained it and rinse well. May appear a little slimy. Return to saucepan with 1 tsp olive oil and 2 T Parmesan cheese. Stir until well coated. Add salt and pepper to taste.
